LEMON DILL NEW POTATO SALAD


3 pounds new potatoes
1 cup mayonnaise
1 TBS dijon mustard
zest and juice of one lemon
2 TBS chopped fresh dill
3 TBS sherry vinegar
1 tsp sea salt
1/2 tsp ground black pepper
2 celery ribs chopped
2 hard cooked eggs chopped
6 small sweet pickles chopped


Place the potatoes in a large pot of water. Bring to a boil, reduce the heat, and simmer until tender, approximately 20 minutes.


Combine mayonnaise, mustard, lemon and zest, dill, salt, pepper, and vinegar and whisk.


Cut the potatoes into large pieces. Toss gently with the celery, egg, pickles and dressing. Re season to taste with salt and pepper. Garnish with fresh dill.
