GREEN BEANS WITH BACON AND TOMATO


1 lb green beans

3 oz diced bacon

1 onion diced

2 cloves garlic minced

1/2 tsp red pepper flakes

2 large tomatoes chopped

1/4 cup chicken stock

salt and pepper


Render the bacon in a large skillet until slightly crisp. Remove and reserve. Cook the onions and garlic in the bacon fat until soft. Sprinkle in the pepper flakes and stir until totally incorporated. Add the chicken stock and bring to a boil. Add the tomatoes and bring to a simmer. Reduce the heat to low and cook for 20 minutes, until the sauce is nice and thick. Turn up the heat and add the beans and reserved bacon. Cover and cook 15 more minutes, until the beans are soft and tender, but not mushy.
