BURK'S BBQ SAUCE
64 oz organic tomato sauce
1 tsp allspice
1/2 c local beer
1 tsp cayenne
1/4 c molasses
1 tsp coriander
1/4 c red wine vinegar
1 tbs cumin
1/4 c lemon juice
1 tsp grnd ginger
1/4 c dijon mustard
1 tsp nutmeg
1/4 c garlic
1 tsp paprika
1 c onion
1 tsp black pepper
1 tsp white pepper
Puree the onions and garlic in a food processor. Place them and the remaining ingredients in a heavy bottom sauce pan. Simmer over low heat for about two hours. Stir often to avoid scorching. The sauce will cook down and darken in color.
