BIG BOB’S CHILI
Rinse and soak 1 1/2 lb red beans overnight.
Drain an place in a large pot and cover with water.
Bring to a boil, and simmer.
While beans are simmering, saute 2 large onions, chopped fine, with one whole head of peeled garlic, chopped coarse.
Add 8 oz dried ancho chiles.
Brown 2 lb lean ground grass fed Skagit beef.
Add onion/garlic mixture, and cooked drained beans. Cook for about 1 1/2 hours.
Season with salt, pepper, and hot sauce, to taste.
