WHEN RADISHES ARE IN SEASON


At the Mount Vernon Farmers Market last year there were so many beautiful radishes that Burk and I wanted to try something different in our demonstration. Of course they're good in a salad, or just fresh, with or without a dip. But, we were sautéing other vegetables in olive oil, and wondered about trying radishes. Ann, at Holly Tree Farm said her customers told her they sauté them in butter. Since Golden Glen Creamery has such wonderful, farmstead butter, new this year, we thought that would be a perfect experiment.

SAUTEED RADISHES
We washed and sliced the radishes, both colorful ones and long white ones, and just tossed them into a pan with some wonderful local butter. I tossed them around for a while, salted, then tasted them. Not interesting yet. So, I just continued to stir them around until, suddenly, they tasted sublime.

Everyone was surprised. Everyone loved them. I'm just sorry I didn't get a taste over to the Golden Glen Creamery booth. (Please forgive me)

SHREDDED RADISHES
When I told this story at our Leadership Group meeting, Carla DiFranco told me about another wonderful way to combine radishes and butter.

Grate the radishes and then mix them in with butter, whatever proportions look good, then spread this mixture on bread. How lucky we are to have great radishes, great butter, and great bread!

I haven't had a chance to try this, yet. But, Carla says it's great, and other experienced food friends agree. Enjoy the radishes of spring!

ROASTED RADISHES WITH BALSAMIC VINEGAR


One bunch of radishes with tops (about 10 radishes)

2 Tablespoons olive oil

2 teaspoons balsamic vinegar

1/2 teaspoon sea salt

black pepper to taste


Preheat oven to 350 degrees.


Wash radishes, removes roots and remove stems. Blot dry with paper towel. If radishes are big, cut them in half.


In large bowl, combine olive oil, balsamic vinegar and salt. Whisk ingredients together. Toss in

radishes and greens until everything is coated evenly with oil.


Spread out radishes and greens on roasting pan or baking dish. Bake in oven for about 10 minutes or until the greens are crispy. Remove the greens and continue roasting the radishes for about another

5 minutes or until tender.
