SLOPPY JOE
1 pound organic ground beef
olive oil
1 yellow onion diced
½ red bell pepper diced
½ green bell pepper diced
2 stalks celery diced
1 tablespoon Worcestershire sauce
1 tablespoon Coleman’s dry mustard
3 tablespoons organic catsup
1 quart box Pacific Organic Creamy Tomato Soup
Sea salt and pepper
Brown the beef in olive oil. Remove with slotted spoon and reserve.
Add onions, peppers, and celery to the oil and cook over medium heat, covered, until soft. Stir in Worcestershire, dry mustard, and catsup, then the beef until well mixed. Add the tomato soup and cook until the beef is tender and the sauce is thickened. Serve on lightly toasted buns.
