SHELLFISH BOIL


3/4 c Kosher salt               1/2 c dried red chilies

1/4 c whole allspice               1/2 c lemon juice

1/4 c whole coriander        2  lemons quartered

1/4 c whole black pepper        1/4 c Tabasco

2 Tbs cayenne                       1 whole head garlic

1 tsp whole cloves


Add all ingredients to two gallons of water. Bring to a boil and cook for ten minutes. Add shrimp, crawfish, or crabs and cook until just done through.
