PEAS WITH BACON


4 lbs peas in the pod

2 oz bacon diced

1 small onion diced

2 TBS olive oil


Vince and I have been enjoying shelling peas from the farmers market, and made up a very simple preparation that is extremely yummy. Cook up a little bit of cut up bacon and sweet onion in olive oil. The quantity depends on how many peas you have available. When the bacon and onion are cooked to your liking, throw in the shelled peas and cook a couple of minutes more.  That's it!


Obviously, the better the bacon the better the flavor. We use Skagit River Ranch bacon, and keep it in the freezer. We just cut off an inch or two, in strips, from the end and return it to the freezer to use for flavoring again another time.
