EASY CABBAGE


I grew up calling this “fried cabbage” because it's made in a "frying" pan. Now we would call it “Sautéed Cabbage”. This is the easiest fresh, healthy vegetable you can make. And, it tastes sweet and crunchy. It’s even good left over. Re-heat it in the microwave. Mix it with other leftovers, especially brown rice.


INGREDIENTS

½ head Cabbage (green, red or mixed)

Olive oil or Canola oil

Salt


PREPARATION

Chop cabbage into medium sized strips.


COOKING

Turn the fire to high/medium, under a medium to large sauté pan.

Add a little olive or canola oil to the pan - maybe 2 Tbs. or more.

When it starts to get hot, add the cabbage.

Toss and salt the cabbage as it cooks.

Keep cooking, and tossing, and adding a bit more salt, until it tastes sweet. There will be a moment when it changes flavor. You will know.



VARIATIONS

You can do the same thing with slices of zucchini and sweet onions.

Start the sweet onions first, then add the zucchini.


My mother always cooked this cabbage with bacon grease.
