SMOKED OYSTERS

WITH HORSERADISH SAUCE


1 quart shucked oysters         2 cups soy sauce

1/2 cup sherry                       1/2 cup brown sugar

1 Tbs ground black pepper 2 inch piece of ginger  

2 cloves of garlic                1 bunch green onions

1 cup sour cream                1/4 cup horseradish

2 Tbs minced crisp bacon         2 Tbs sliced green onion       


In a large bowl, dissolve the brown sugar in the soy sauce and sherry. Add the black pepper. Thinly slice the ginger root and add. Mince the garlic cloves and add. Slice the green onions into 1 inch sections and add. Place the oysters and their juice into the bowl and marinate them over night in the soy mixture. Pour the mixture through a colander. Spread the oysters and vegetables on to a sheet pan and smoke until just firm.


Mix the sour cream, horseradish, bacon, and green onions together for a dipping sauce.
